Noods as in NOODLES! – It’s the perfect weather and time of year for SOUP and it’s always a super convenient way to use up whatever is in the fridge too! Put together this crockpot coup recipe with inspiration from Simply Taralynn’s latest recipes – go check out her blog too!

Chicken Vegetable Soup with Noods

Easy crockpot recipes are another favorite at this time of year! Dump everything in, set it and forget it! The more simple we can keep it around the holiday hustle and bustle the better! It seems like lots of colds are going around too and soup is soothing for that too.
This recipe makes a big batch and if you don’t have something on hand just sub it out for something else or just leave it out. No big deal.
Another shortcut you could take would be to buy the pre-chopped soup veggies. My grocery store has these in their produce aisle and I actually bought a big container of pre-chopped onions!
I suggest leaving the beans and noodles out until the last hour of cooking (lesson learned) as mine turned to mush Immediately thought of that AFTER I added them … not perfect! You could also easily leave out either one and add wild rice, quinoa or some other type of grain or seed if you wish.
I will say that the soup doesn’t look quite as vibrant AFTER cooking, but I promise it is tasty!
What you need:
2 lbs of boneless skinless chicken breasts cut into 1 inch pieces
2 large containers of reduced sodium chicken broth
1/2 onion chopped
1 red pepper chopped
1 small container of mushrooms (rinsed)
half bag of baby carrot halved
1 small zucchini chopped into fourths
half bag of snap peas
1 cup egg noodles
1/2 can of white beans drained and rinsed

seasonings: sea salt, pepper, no salt 21 flavor seasoning from costco, dill weed, thyme, tumeric

How to:
Spray a large crockpot with cooking spray
Add chicken to the bottom
Add all your veggies
Add 1.5 of your containers of chicken broth
Add seasonings to your liking

Set crockpot on high for 3 hours and stir every hour if able
Then cook on low for two
Add your noodles and beans (if using) for the last hour of cooking

Serve! Add more seasonings to your bowl if you wish

I served up mine with some soup crackers and some deli turkey – so good!
